This watermelon popsicle is the perfect treat to enjoy on a hot summer day. It has no added sugar, takes less than 10 minutes to make, and requires just 2 ingredients. It is nutritious and delicious.
Watermelon is one of my favorite summer fruits! It is over 90 percent water, making this sweet fruit very refreshing and hydrating. It is also jam packed with nutrients. Each sweet and juicy bite contains antioxidant vitamins A and C, fiber, and potassium.
These popsicles are sweet and contain blended sweet watermelon and tangy lime juice that has been frozen into a perfect summer snack. And they are simple to make.
Ingredients and directions:
Watermelon, 2 pounds, approx. 3 ¼ cups
Lime juice, 2 tablespoons
Optional, frozen blueberries
Cut watermelon into chunks. Place the watermelon lime juice into a blender and blend until the mixture is smooth.
Pour the watermelon mixture into BPA-free popsicle molds. (I like these and these.)
Place the pops in the freezer for approximately 2-3 hours or until solid.
Optional: for “watermelon pits”, add a few frozen blueberries. For a more decadent dessert, add a few chocolate chips.
