Calling all chicken fans. Here is a healthy–and delicious–chicken recipe for you to enjoy. Chicken breast is a nutritious and filling protein option. This recipe calls for assorted vegetables making it a colorful win-win.
Roasted chicken and vegetables with garlic and herbs
Cook Time 20-25 minutes (oven times may vary)
Serves 5-6
Ingredients:
1 1/2 lbs boneless skinless chicken breasts (cut into 1-inch pieces)
2 cups cauliflower (or vegetable of choice)
2 cups broccoli florets (or vegetable of choice)
1 onion cut into 1 inch pieces
2 red or yellow peppers, cut into 1 inch pieces
1 cup grape tomatoes sliced in half
(Feel free to vary your vegetables.)
For the marinade:
1/4 cup olive oil
4 cloves garlic (chopped or crushed)
2 tablespoons dried parsley or basil
2 tablespoons dried cilantro
1 teaspoon chili pepper flakes
Salt and pepper to taste
juice of 1/2 lime
Instructions
Start meal with healthy appetizers– tossed salad with vinaigrette dressing, roasted beats, and hummus dip
Enjoy a fruit salad for dessert.
