It is officially fall which means it is time to start sharing some of my favorite seasonal dishes!
This stuffed acorn squash recipe from my book Finally Full, Finally Slim is simple, satisfying and delicious. Acorn squash is rich in fiber, vitamin C, B vitamins, potassium and magnesium. It’s also rich in carotenoids, making it full of antioxidants! While butternut squash is more popular, acorn squash is yummy too.
Ingredients:
-1 small acorn squash, split in half, roasted (Bake at 400 degrees for 30 to 45 minutes, until tender.)
-1/2 cup cooked quinoa
-1/3 cup goat cheese, or 1/2 cup white beans
-2 tablespoons chopped dried figs
