I love sweet potatoes in all forms. Luckily, they are highly nutritious, and rich in vitamins, minerals, and antioxidants. Here, I share some of the health benefits of sweet potato along with a recipe and a recipe reel.

The antioxidants in sweet potatoes contain numerous health benefits including cancer fighting properties.
A potent antioxidant in sweet potatoes is beta carotene. This powerful antioxidant is converted to vitamin A in the body, which is beneficial for our vision. Vitamin A is an essential vitamin for our immunity as well; it helps our heart, lungs and other organs function properly.
Sweet potatoes also contain anthocyanins, antioxidants which can improve brain function by reducing inflammation and fighting free radicals. Research has also shown that the anthocyanin in sweet potatoes helps prevent against colon cancer.
Sweet potatoes are considered a starchy root vegetable and are extremely nutrient dense. Public service announcement: Even though they are a starch, they are super healthy and are not “fattening” contrary to popular belief. They are rich in fiber which promotes healthy blood glucose levels, helping to keep your blood sugar steady. Moreover, they contain both soluble and insoluble fiber and help keep you full, a dieter’s best friend. Furthermore, the soluble fiber also aids in gut health as the viscous fibers help to absorb water and soften the stool.
Here’s a yummy roasted sweet potato recipe I love. Roasted sweet potatoes are also a perfect side dish if you are observing Passover. They are a staple in my house and beat the overpriced, ultra-processed store-bought sides. I hope you enjoy!
The dEATS:
• 1 medium sized sweet potato (chopped into small, bite-size pieces)
• 1 tablespoon of extra virgin olive oil
• Salt, pepper, onion powder, crushed red pepper and garlic powder
Chop up sweet potatoes into bite size pieces. Preheat the oven to 350 degrees. Coat the pieces with olive oil and all the spices. Roast the sweet potatoes for about 1 hour in the oven. Eat this healthy dish as a snack, to top off your salads, or to eat as a side dish!
