I first discovered this cauliflower rendition at a middle eastern restaurant and loved it. Years earlier, I remembered that a client, a talented chef, also used to make it.
It is so simple and so tasty.
And cauliflower, despite being a “white” vegetable, offers up a ton of good nutrition. A cruciferous vegetable and member of the brassica family, cauliflower is high in fiber, potassium, vitamin C, folate, and vitamin B6. It is also low in calories, with just 150 calories for an entire head!
Here are the deets:
-Wash the cauliflower and cut off the leaves.
-Sprinkle with garlic powder and a dash salt and pepper. Coat the cauliflower with olive oil.
-Drizzle a baking sheet with olive oil spray and put the cauliflower on it.
-Roast in the oven on 400 for approximately 30-40 minutes.
-Serve it on a plate over tahini.
This dish is great for vegetarians and carnivores alike.
I enjoy a slice or two of cauliflower steak with grilled fish or chicken and a side of roasted potatoes.
