RECIPE of the week: Roasted Cabbage Steaks

Hello,

Looking for a fresh way to serve up cabbage? This easy recipe turns a humble veggie into a crispy, caramelized, flavor-packed dish everyone will love.

These roasted cabbage steaks are crispy on the edges, tender in the center, and full of zesty, savory flavor. A simple and delicious way to enjoy more veggies—and they make the perfect side dish or plant-based main!

Here’s the recipe with directions.

What you’ll need:

  • 1 head of cabbage
  • 5 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 2 tbsp lemon juice
  • ½ tsp Dijon mustard
  • ¼ tsp grated garlic
  • ½ tsp salt
  • ½ tsp pepper
  • Fresh thyme to finish

  1. Preheat oven to 425°F and line a baking sheet with foil
  2. Slice cabbage into 8 wedges
  3. Mix olive oil, vinegar, lemon juice, dijon, garlic, salt & pepper
  4. Pour marinade over cabbage and let sit for 15 minutes
  5. Place on baking sheet and roast for 35–40 minutes, flipping halfway
  6. Top with fresh thyme and serve hot!
