I love soup and enjoy it as part of a meal or snack most days of the week. I whipped up this healthy Roasted Butternut Squash Soup that’s cozy, creamy, and full of flavor. It is a delicious way to warm up on a chilly day — made with wholesome ingredients like squash, carrots, garlic, and onion. Naturally sweet, velvety smooth, and rich in vitamins and antioxidants, it’s an easy butternut squash soup that’s both comforting and nourishing. Perfect for a light lunch, snack, or part of a cozy vegetarian dinner, this recipe brings all the best flavors of fall to your bowl — simple, satisfying, and heart-healthy!

Creamy, cozy, and packed with nourishing veggies — this soup is fall comfort in a bowl! Perfect for a chilly day, it’s naturally sweet from the roasted squash and carrots, with a rich, savory flavor from roasted garlic and onion.

Here’s what you’ll need:
* 1 medium butternut squash
* 2 large carrots
* 3 vine tomatoes
* 1 yellow onion
* 1 head of garlic
* 2 cups vegetable stock
* Olive oil, salt & pepper to taste

1. Preheat oven to 425°F
2. Wash, peel, and chop the veggies
3. Arrange everything on a lined baking sheet
4. Drizzle with olive oil and season with salt & pepper
5. Roast for ~25 minutes until tender and golden

7. Blend until smooth and creamy
